Dad’s Famous Broccoli Dish

my kids favorite side dish at every holiday and birthday is Dad's famous broccoli dish - just don't tell your kids what the ingredients are

2 10-oz. packages frozen, chopped Broccoli
1 can cream of mushroom soup
1 cup pure mayonnaise
2 eggs well beaten
1 cup sharp cheddar cheese
1/2 cup sliced almonds
salt and pepper to taste
2 packages of Ritz crackers

Directions

Defrost/thaw Chopped broccoli

Mix together in large bowl: broccoli, cream of mushroom soup, mayonnaise, eggs, cheese, almonds, salt and pepper.

Butter a 9x13 casserole baking dish and pour mixture into dish.

Crush the Ritz crackers in a zip lock bag, then pour over top of broccoli mixture

Bake at 375 degrees for 30 minutes

Fun Kids Thanksgiving Table Ideas

Thanksgiving is such a special time of the year.  Getting your family and closest friends together to celebrate your love and being thankful for one another is such a blessing.  I love decorating for Thanksgiving and getting the table all set up.  I tend to not put all the kids at one table because they complained years ago that they wanted to sit by other people like Grandpa, etc...  So I mix them in with the adults.  But they can become restless sitting there for that long.  So keep them occupied.

Three Deliciously Easy Harvest Soups to Warm Your Soul

Turkey,Squash, and Pasta Soup
1 tablespoon olive oil
2 medium stalks of celery, coarsely chopped
1 medium onion, coarsely chopped
1 teaspoon dried sage
6 cups reduced sodium chicken broth
3 cups cooked, chopped turkey
1 1/2 cups uncooked tri-colored pasta (your favorite pasta will do)
1 1/2 cups cubed butternut squash
peppered to taste preference

Sautee celery,onion and sage in olive oil over medium heat until onion is soft.
Stir in remaining ingredients and heat to a boil. Reduce heat to medium and cover.
Cook for 12-15 minutes, until squash and pasta are tender.

 
Chunky Tomato Soup
2 tablespoons olive oil
2 medium celery stalks, coarsely chopped
2 medium carrots, coarsely chopped
2 cloves of garlic, finely chopped
2 cans (28oz each) plum tomatoes, undrained
2 cups water
1 teaspoon dried basil
1/2 teaspoon pepper
3 cups chicken broth

Heat olive oil over medium heat.
Add celery, garlic and carrots; cook 7 minutes until carrots are crisp.
Stir in remaining ingredients and bring to a boil.
Reduce heat to low;cover and simmer one hour.
Garnish with fresh basil and fresh parmesan cheese.


Curried Squash Soup
1 tablespoon butter
1 medium onion, chopped
1 clove of garlic
1 finely chopped
1 3/4 cups reduced sodium chicken broth
1/2 cup apple juice
2 boxes frozen winter squash (10 oz each), thawed
2 teaspoons curry powder
1/2 teaspoon sea salt
1/4 cup half-and-half

Heat butter over medium heat.
Add onion and garlic; cook 5 minutes until tender.
Stir in all remaining ingredients except half-and-half; heat to a boil.
Simmer for 5 minutes before adding half-and-half.
Stir in half-and-half and cook until hot. Do not boil.



White Cheddar Biscuits will make a wonderful addition to any of the above soups!
4 cups all-purpose flour
2 tbsp baking powder
1/2 tsp salt
1/2 cup shortening
1/4 cup butter
1 1/2 cups shredded sharp white cheddar
2 tsp black pepper
1 1/2 cups milk
1 egg
1 tsp water

Preheat oven to 400 degrees F
Lightly grease a large baking sheet.
Combine first 3 ingredients in a large bowl.
Use a pastry blender to cut in shortening and butter.
Add cheese and pepper; mix well.
Add milk and stir until moist.
Place dough on a lightly floured surface; knead dough until smooth.
Divid dough into 2 inch round biscuits.
Whisk together egg and water; brush over top of biscuits.
Bake for 12-15 minutes until golden brown.

Meals The Costco Way

One trip to Costco equals 6 quick-and-simple meals ready to serve to my family on those busy night.  We have even been known to create these same meals while vacationing as a family.

The Novotny’s ½ Dozen Costco Meal Ideas:

1. Chicken/Cheese Quesadillas – We purchase the Kirkland pre-cooked, grilled chicken breast. It comes in a 2 pack in the deli/refrigerated food section. I sauté the chicken in taco seasoning , then place it on flour tortillas with shredded cheese. Then grill it in a frying pan or griddle to melt the cheese and chicken. Serve with salad, chips, salsa and fresh fruit.

2. BBQ Beef sandwiches – The BBQ beef comes already in its own sauce. You can find this 2-pack (box) in the deli/refrigerated section. We heat up the BBQ beef then place on toasted hoagie rolls. Serve with either fries or chips and some fresh fruit.

3. Rotisserie Chicken – You purchase this fully cooked chicken already hot and ready to eat. Serve with salad and mashed potatoes (instant to keep it simple).

4. Pizza – The easiest $9.99 meal. They are HUGE.

5. Frozen Lasagna – You can find these in the frozen food section in a 2-pack. Serve with French bread, salad and steamed green beans. (These do take a while to bake, so plan ahead.)

6. Chicken Pot Pie – Large enough to feed my family of 7. It is a seasonal item, but I have successfully frozen it, thawed it out and baked it with rave Novotny kid reviews. This is found in the meat section of the prepared food department. (This takes 1½ hours to bake.)

Fun Filled Omega 3 DHA Crepes



When your kids begin to tell you they need and want more Omega 3 in their diet you know it’s time as a mom to search for creative ways to incorporate Omega 3 into their diet. Yes that’s me the mom who was told by her 9 year old that he needed more Omega 3 in his diet for his heart and brain.

With a variety of eaters in our home I have discovered that my daughters crepe recipe is a perfect way to get extra Omega 3 into our diets.  Her crepe recipe calls for both eggs and milk and by using Horizon brand you will be including Omega 3 DHA in your crepes.  An your family can  even choose to fill their crepes with fillers that contain Omega 3 as well. (see list below).

Crepes are easier then you think to make and your entire family will enjoy filling and eating them while getting a good dose of Omega 3 DHA.

Savannah’s Crepes
5 eggs (Horizon brand with Omega 3 DHA)
1 2/3 cups milk (Horizon brand with Omega 3 DH)
2  ½ tablespoons butter, melted
1  ¼ cup all purpose flour
2 ½ tablespoons whit sugar
½ teaspoon salt

Mix all ingredients in a blender.  Pour desired amount in a prepared stove top frying pan (prepared with melted butter) .  Allow batter to cover entire pan to create a large round crepe. Once fully cooked on one side flip it over to finish cooling opposite side.

Remove from pan fill center or crepe with assorted fillings and roll crepe style and enjoy.

Two Simple Dinner Recipes Kids Love

TWO Simple  recipes from Trish Berg 

Two Cup C
asserole


In a large mixing bowl combine:

2 cups uncooked macaroni noodles
2 cups shredded cheddar cheese blend
2 cups milk
2 cans "cream of something" soup (I use chicken)
2 cans corn (drained)

Stir.

Pour into a greased 9x13, cover with foil

Bake for 1 hour in a preheated 400` oven

Test noodle for done-ness, as ovens vary.

Side Dish Options: Add a salad and loaf of garlic and dinner's done!

*Note: Can be prepared the night before, cover with foil and put in fridge.

*Note: Can use 1 C/1can method will make a nice 8x8 casserole.


Sweet and Saucy Meatballs



1 bag frozen meatballs (32 to a bag)
(Note: Or you can make your own from scratch if you prefer)
2 cans tomato soup
1/2 cup brown sugar
1/4 cup vinegar

Lay meatballs in 9x13 glass baking dish. In mixing bowl, whisk together soup, sugar and vinegar. Pour over top of meatballs, and bake at 350 for one hour.

SIDE DISHES: Goes great with mashed potatoes and corn on the side.

Monster Burgers

Here is a fun October lunch or dinner time meal for your family that will get the whole family talking (or laughing) about it!

Monster Burgers

INGREDIENTS
8 all white turkey burgers
8 buns
8 slices of your favorite cheese
8 slices of ham
16 slices of pickle
Ketchup


1) Grill or broil burger to perfection

2) Place burger on bottom half of the bun

3) Use a table knife to cut the cheese slice in half using a zig-zag pattern like teeth. Put half of the cheese on the patty, hanging over the bun so it looks like teeth are hang off one side.

4) Take one slice of ham and fold it over in a tongue pattern. Put the ham on top of the "teeth". Top the ham with the other slice of zig-zagged cheese. Top with the half of the bun.

5) Put 2 pickle slices on top of the bun as eyes. Dot the "eyes" with ketchup.

MOM Tip - Meat Loaf Balls


Mom Tip: I make individual LARGE meat (loaf) balls, and then use my muffin tin to bake them. I also freeze them (un-cooked) in pre-formed meat (loaf) balls, so that when I am preparing a meal I can take out of my freezer the number of meat (loaf) balls that I need depending on the number of people I am serving.

Taco Soup For The Crock Pot


Novotny's Taco Soup

1 lb ground beef
1 medium sized onion
2 cans whole kernel corn (drained)
2 cans Stewed tomatoes
2 cans red kidney beans
1 pkg taco seasoning
6 to 8 cups of water ( add more if needed)
Cook ground beef and drain. Add all of the ingredients and let simmer for 20 minutes or place in crock pot on low for 4 to 6 hours.

Top with grated cheese and Frito corn chips. Sour cream and salsa make a great topper as well.

Chili and Cornbread In A Jar

 Ingredients:
1lb ground beef
1 cup chopped onion
3/4 cup chopped green pepper
1 clove garlic (minced)
1 - 16 oz. can tomatoes (cut up)
1-16 oz. can dark red kidney beans drained
1 -8oz. can tomato sauce
2 t. chili powder
1/2 t. dried basil (crushed)
1/2 t. salt
1/4 t. pepper

recipe yields: 4-6 servings

Cooking day instructions: 
Cook ground beef, onion, green pepper, and garlic until meat is browned. Drain off fat.  Stir in undrained tomatoes, kidney beans, tomato sauce, chili powder, basil, salt and pepper.  Bring to boil; reduce heath.  Cover and simmer about 20 minutes longer.  Cool, place in gallon bags, and freeze.

Serving day instructions: 
Thaw completely.  Simmer until heated through and serve.

This is a great feed teh freezer meal if you double or triple this recipe.

6 Things To Make In A Muffin Tin

Muffin tins are great for more then just baking cupcakes and muffins in - here are 6 simple ideas to create in your muffin tins that your family will enjoy:


Oven Baked Eggs - to eat or to make egg muffin sandwich's with.
Directions:  Pre-heat oven to 350 degrees, Grease each muffin section with either butter or cooking spray, crack one egg into each muffin section, place in oven and cook for 15-20 minutes. 


Corn Dog Muffins - If your kids love Corn dogs they will love this new recipe I discovered  from once a month mom.  It is a great make ahead recipe to freeze for future meals and snacks.  Simple to make with boxed cornbread mix and hot dogs.  Click here for complete recipe and how to instructions.


Flavored Ice Cubes - With holiday entertaining coming up you will love using these lemon flavored ice cubes made in your muffin tins.  Perfect to use in your punch bowls. Place 2 to 3 thin sliced lemon and/or limes into each muffin section.  Fill each section with water leaving space for freezing expansion.  Place in freezer on flat surface.  Freeze for 6 or more hours. Remove from muffin tin and place in pitcher or punch bow. Alternative ideas - Use berries instead of lemons, use flavored beverage instead of water.

Individual Meat loaves -  My son calls these meat loves - my kids enjoy meat loaf when I make them individual muffin size loaves using my muffin time to bake them in.  Make your family favorite meat loaf recipe and instead of placing in a loaf pan place prepare a muffin tin with cooking spray then fill each muffin section with your meat loaf mixture.  Bake at temperature stated in your recipe but cut baking time in half or even less.  These small meat loaf versions will cook much quicker.  Need a meat  recipe click here for Kraft Foods Marvelous Mini Meatloaves recipe.

Soup Stock - Fill each muffin section with chicken or turkey stock then freeze.  Once frozen pop out and place in freezer bag for future use when cooking and in need of stock.

A1 Steak Sauce Roast - Crock Pot Recipe

A1 Steak Sauce Roast
From: Amber Chapman Watson via the A1 bottle of steak sauce
1 roast, 2-3 pounds
1 pound baby carrots
1 pound red potatoes
1 chopped onion
1/2 cup A1 steak sauce
1/2 cup water
1 packet onion soup mix

Place roast in crock pot. Cover with onions, carrots, and potatoes.
Combine soup mix, A1, and water. Pour this over the veggies.
Cook on low 7-8 hours.

Balsamic Chicken:

Ingredients
4-6 boneless, skinless, chicken breasts
2 14.5 oz can diced tomatoes
1 onion thinly sliced (Not chopped)
4 garlic cloves
1/2 cup balsamic vinegar
2 tblsp olive oil
1 tsp each: dried oregano,basil, and rosemary
1/2 tsp thyme
ground black pepper and salt to taste

Pour the olive oil on bottom of crock pot
place in chicken breasts, salt and pepper each breast
put sliced onion on top of chicken
then put in all the dried herbs and garlic cloves
pour in vinegar and top with tomatoes

Cook on high 4 hours, serve over angel hair pasta

DIY Taco Seasoning Mix

The Novotny's are a Taco loving family and tend to go through many warehouse size containers of taco seasoning each year. But I now have stumble across a DIY ( do it yourself) recipe to making my very own Taco Seasoning mix thanks to Jolly MOM.

Make Perfect Tacos with Your Own Homemade Taco Seasoning Mix! {Recipe}

Every couple weeks or so, we have Taco Night at our house! It is one of our favorite meals and honestly, tacos are actually very healthy depending on how they are made. Making your own seasoning mix is the first step in healthy and delicious tacos. It is so easy to do and you will be skipping all the chemicals in the prepackaged stuff!

Taco Seasoning Mix:
1/4 cup all-purpose flour
1 tablespoon chili powder
1/2 teaspoon Kosher salt
1/2 teaspoon dried minced onion
1/2 teaspoon paprika
1/4 teaspoon onion powder
dash garlic powder

Place all of the above ingredients into a zip top bag or small container. It makes enough mix to season one pound of ground beef. What I do is premake a few of these to have on hand anytime we need it. When you're ready to make tacos, this is what you do:

1. In a medium bowl, combine the ground beef with the seasoning mix.
2. Add the seasoned beef mixture to skillet over medium high heat. Brown the meat and then add a 1/4 cup of water to the skillet. Turn the heat down to low, cover the skillet and cook for 5 to 6 minutes or until beef is cooked through.
3. Have fun building your tacos!

Taco Building Tips:
1. For extra flavor, add sauteed onions and minced garlic to your ground beef just before browning.
2. Don't use prepackaged shredded lettuce. It only takes seconds to shred your own and it honestly tastes so much better!
3. Use lots of fresh veggies like diced tomatoes, fresh salsa, corn, and others to take your tacos to another level.
3. Use whole grain taco shells. Ortega makes some yummy ones!
4. Use lean beef--they taste just as good!

Meat:
1 TBSP Olive Oil
2 Chicken Breasts 1 1/2 - 2 lbs
1/2 Onion Diced
1/4 Cup Diced Green Pepper
1 TBSP Fresh chopped Cilantro
1 14oz Can Enchilada Sauce
1 Heaping TBSP Diced Green Chilies
1/2 tsp Chili Powder
1/4 tsp Paparika
Pinch Black Pepper
1 Garlic Clove Minced
1/2 Cup Water
1/2 Cup Diced Tomatoes
                                                                                                                                                           
Topping Sauce:
1 14oz Can Enchilada Sauce
1 tsp Diced Green Chilies
Pinch Black Pepper
1 - 2 Cups Grated Cheese
A pinch of Fresh Chopped Cilantro
1 TBSP Diced Tomatoes
1/4 tsp Chipotle Seasoning

Other: 8 Flour Tortillas

Directions: Meat: In a large sauce pan heat 1 TBSP olive oil over medium heat. Next, add diced onions and green peppers to the oil; saute until soft about 3 minutes.  Now, add garlic, chicken breast, green chilies, enchilada sauce, water, black pepper, chili powder, paparika, cilantro, and tomatoes.  Bring to a boil, and then cover and simmer for 2 hours. Now, using a potato smasher, press down on the meat, and it should all fall apart like shredded chicken. "If it doesn't, then cover, and simmer for 30 minutes."  Once you have smashed all the meat into shredded chicken increase heat to low/medium, and continue to cook until the liquid reduces.   

Sauce: In a seperate sauce pan place enchilada sauce, chilies, black pepper, 1/4 tsp Chipotle Seasoning, and tomatoes.  Bring to a boil, and then reduce heat to simmer. Make the sauce about 20 minutes before you are ready to serve.   

Making the Enchiladas: Take flour tortillas and microwave for 30 seconds, this softens them. Pre-heat oven to 350 degrees. Lay, one flour tortilla down on a cutting board or counter, and place a small amount of cheese in a line along one side of the tortilla, top the cheese with a couple TBSP of meat.  Then, start from that side and roll the tortilla up. Place on one side of an oven safe casserole dish, repeat this until your casserole dish is full. Cover your enchiladas with the sauce you made, and then top with the extra cheese. Place in the oven for 5 minutes, or until the cheese is fully melted.  Garnish with a little fresh cilantro when it comes out!
