Warm Brie with Pecans and Cranberries
from www.wasabimon.com

The Ingredients:
1 package of brie (a round would fit in the crock much better than the triangle. I realized that a bit too late.)
1/3 cup candied pecans
1/4 cup dried cranberries

The Directions:
I used my little 1.5 quart crockpot. If you don’t have one, you can insert a corning ware or other high-heat resistant dish into your large stoneware. It will take longer to heat through and melt, but will work just fine.

Place brie in bottom of stoneware (or in my case with the triangle, squish to fit). Chop up candied pecans and cranberries and dump on top of brie. Cover and cook on low for 4 hours or high for 2.

Serve with sliced apples and/or your favorite crackers

1/2 cup butter
1 cup sugar
2 eggs
1 cup ripe bananas; mashed, 2 to 3 medium bananas
1/3 cup milk
1 teaspoon lemon juice
1/2 cup walnuts, chopped
1 flower pot,
terra cotta, about 6 1/2 inch size, to fit in crockpot
Preparation:

Wash a new flower pot well; grease then line with waxed paper, cutting to fit. Note: Make sure the flower pot fits in your
crockpot, or use a 2-pound coffee can. Grease the waxed paper.
Mix flour, baking soda and salt. In a separate bowl, cream butter, then add sugar, eggs and bananas, blending thoroughly. Combine milk and lemon juice to banana mixture, alternately add flour and milk mixture, then stir in nuts. Pour mixture into prepared flower pot and place in

Yogurt In A Crockpot
chefmichele.blogspot.com

Ingredients:
1 quart milk (2%), homogenized
4 teaspoon yogurt,plain
4 teaspoon sugar, optional

Heat the milk in a saucepan until lukewarm; if the milk is too hot at this point, it will destroy the culture and the mix will set. Put the yogurt in the
crockpot and stir in the sugar and milk thoroughly. Cover with a clean dish towel (do *not* cover pot). Heat on low 1 hr. then turn off the pot and leave undisturbed for 2 hours. The yogurt should now be just set. Lift the pot from base, cool then refrigerate. Flavorings should be added after yogurt has set. Flavorings such as powdered coffee (2-3 t.), powdered milk drink flavorings (2-3 t.), cocoa, chopped fruit, honey, vanilla extract (1 t.), and various types of extract can be used (try 1 t. to 1 qt. of yogurt) can be used. **This can only be made in a crockpot that can be removed from base. Yogurt doesn't like to be disturbed when setting. Try draining 1 pt. of the set yogurt overnight in cheesecloth. You end up with "Syrian cream cheese". You use it (cold) the way you use regular cream cheese. From: Kathleen Morrison Date: 20 Mar 96

CrockPot Granola Recipe

From: A Year Of Slow Cooking

The Ingredients.

- 5 cups oats (if gluten free, make sure the oats are certified GF.)
- 1/4 cup honey * (see note below)
- 1/4 cup melted butter * (see note below)
- 1 T flax seeds
- 1/4 cup slivered almonds
- 1/4 cup raw pumpkin seeds
- 1/4 cup raw sunflower seeds
- 1/4 cup unsweetened coconut
- 1/2 cup dried fruit (I used raisins and cranberries)

The Directions.

Put all the dry ingredients into your crockpot. You'll need at least a 4 quart.

Melt the butter in the microwave, and add. Add the honey. Toss well.

*note: if you add this amount of honey and butter, the granola will be cereal-like, and not trail-mix like. If you'd rather the granola clump together in pieces, you'll need to add more honey and butter. I tried it with the honey and butter doubled (1/2 cup each) and it still didn't clump much--so if you'd prefer your granola that way, you'll need to add at least 3/4 cup of honey. I didn't want that much sugar, and my kids are cool with eating it like this.

Cover, but vent with a chopstick. Cook on high for 3-4 hours, stirring every so often.

If you can smell the granola cooking, go stir. It will burn if you don't keep an eye on it. But it won't burn as quickly as it does in the oven!

Dump out on some parchment paper and let cool. Eat with milk like cereal, warmed with milk like oatmeal, or as is. Seal well in an air-tight container or in a ziplock. Granola freezes well.

Crock pot Egg Casserole

By Linda Larsen, About.com

Use your imagination when making this recipe. Try Canadian bacon instead of ham. Use Havarti or Swiss cheese instead of Cheddar. Add some minced jalapeno peppers if you like hot foods. Then enjoy!

  • 12 eggs
  • 1 cup whole milk

3 Steps to Crock Pot Cooking

By Nancy Peterson

Enticed to use that Crock Pot but you don’t know where to start? Here are a few easy steps to get you “hooked” on that much loved crock pot.

Step 1- Buy a ready made crock pot meal. Once you see how easy it is and how great the house smells, you’ll be ready to skip ahead but do step 2 in the meanwhile.

Step 2-Go to the library and check out crock pot or slow cooker recipe books for FREE or purchase one basic one like The Slow Cooker Bible.

Step 3- Start with a simple old fashion crock pot standard- Pot Roast.
A) Buy cheap roast (beef), potatoes, carrots, 2 cans cream soup, one package onion dry soup mix.
B) Brown meat on all sides with a splash of Worchester if you have on hand
C) Cut potatoes in half add carrots, and then meat and place in crock pot
D) Mix soups and add over the top
E) Place on low for 9-11 hours or high from 4-6 hours (time varies)
* This is a no fail crock pot basic with gravy included
* For cream soup use-celery or mushroom

I have been using my crock pot for over 16 years and LOVE it. You can make dinner in the morning which makes the dinner hour less hectic. Try it once and you’ll be hooked!!

Save time, money, and frustration with your Slow Cooker

By: Brandee Pittenbger

Top 10 Reasons why you should use a slow cooker.

1. Once your ingredients are all added you do not have to stand there and cook or watch over your meal except for maybe an occasional stir.

2. The food never burns.

3. The meat is always moist and tender, and never dries out.

4. You can make a huge portion and usually have leftovers.

5. Most meals require very little prep.

6. Most meals are very inexpensive to make and taste like they are fine dining.

7. Meat can be added raw or frozen. (except for hamburger, I always cook and drain this because of the fat)

8. Most meals can even be put in the slow cooker the night before and left on warm until needed.

9. When your family comes home and smells and see food cooking in the crock pot, they get happy and know something good and warm is going to be served for dinner.

10. You can put make oatmeal, cream of wheat, or malt o meal in the crock pot the night before and have a warm breakfast waiting for your kids in the morning. Just follow the directions on the package and add a little more liquid.

Must knows for every crock pot recipe!

Unless specified all ingredients are added all at once.

Cook on lowest heat

Cook for at least 8 hours.

I use all generic brands of food or what is ever on sale to save money.

Leave the skins on all veggies for flavor, nutrients, and time.

For a cheaper version of chicken or beef broth I use powdered chicken or beef bullion and water.

4-6 carrot big sticks chopped up

1 onion chopped up

* 1 cup of rice or 2 cups of noodles (add this ingredient 1 hour before serving)*

Chicken broth (enough to fill up to the top after all ingredients are added)

Johnny’s seasoning salt, salt, and pepper to your tasting.

Roast Beef Dinner

I package of frozen beef any size

8 carrots sliced

2 onions sliced

1 package of Lipton’s onion soup mix mixed with

2 cups of water

Johnny’s seasoning salt, salt, and pepper to your tasting.

*6 potatoes chopped up and 1 more cup of water*

*My family prefers mashed potatoes so I do them separately, but most important is that I drain and use the juices from the cooked meal in the crock pot to make my gravy. (Ugh yes I know this is added work, and it goes against my quick cooking but it really is good, and I guess they are sometimes worth it ha ha!)

Sandwiches or Meal?

Frozen chicken breasts, beef, or pork, your choice.

2 jars or cans of spaghetti sauce

Hamburger buns or Rice or noodles cooked separately.

If you want sandwiches just scoop the ingredients onto a bun

If you want a meal, just scoop ingredient on top of starch!

Brandee’s To Die For Spaghetti

1 package of hamburger

1 onion chopped up

Johnny’s seasoning salt

*Cook these together and drain the fat. I use the microwave for this.*

*My family prefers that I do not add the meat directly to the sauce. They like me to make meatballs out of this, cook separately and then add the meatballs to the sauce. I like this too, as I am not a big meat eater, and then I can just eat a meatless sauce.*

3 - 29oz (big short fat cans) tomato sauce

2 small cans tomato paste

2 small cans of chopped black olives

2 tbsp fresh chopped garlic in the jar

2 tbsp sugar

2 tbsp parley flakes

1 tbsp oregano

1 tbsp Italian seasoning

Johnny’s seasoning salt, salt, and pepper to your tasting.

Spaghetti noodles cooked separately

*Do not cook over 6 hours, and leave on warm too long. Spaghetti sauce is the only thing I have found in a slow cooker that can obtain an over cooked taste.

Crock Pot Use TIPS

Crock Pot Food Safety

Info from About.com and FDA

140F. is the temp food needs to reach as quickly as possible- within 1 ½ hrs.

To test the temp of your crock pot fill w/ 2 qts. Water, cover and simmer on low heat for 8 hrs. Check the temp with a thermometer, it should read 185F. If it is higher your food may cook faster, so you will need to adjust your cooking time, but if it is lower you should discard the cooker and buy a new one.

If possible cook food on high the first hour, and then return to low.

1hr. on high is equal to about 2 hrs on low.

Experts say that you should not put frozen foods into your crock pot. Especially if you have at risk people in your household, under age 2, elderly, immune compromised.

You do not need to brown meats before adding to crock pot, except for ground meats. However, browning meat ahead reduces fat and adds flavor and color.

When preparing the night before for a crock pot meal, store meat and cut up vegetables separately in the refrigerator. Assemble in the morning

Vegetables cook faster than meat, so put them on the bottom

Fill crock pot no less than 1/2 full and no more than 2/3 full

Try not to remove the lid during cooking, each time you do it adds 20 min onto the cooking time

Place leftover in shallow containers and refrigerate. Do not put the crock into the frig. It will take too long to cool down and you will risk food poisoning.

Don’t reheat leftovers in the crock pot. It is not safe as it takes too long to reheat.

Power Outages and Crock Pots

In the event of a power outage and you have left your home with your crock pot going and return to discover the power is out, the food may not be safe. It is best to throw it out.

If a power outage occurs when you are home with your crock pot going, if the cooking is not done you need to finish that by another source, a gas stove, a neighbor’s house with power, a grill if possible.

If the food was done cooking when the power outage occurred it should be safe for up to 2 hrs with the lid on.

Cleaning your Crock Pot

It is very helpful to use a nonstick cooking spray prior to cooking. You can also purchase crock pot liners. Reynolds makes them.

Soak you liner in hot soapy water for 15- 20 minutes

Clean with a dish rag or a nylon net pad.

Never use an SOS pad or other harsh, abrasive cleaner.

Some things to consider when buying a crock pot

Size: Buy according to the size of your family. A 5-6 qt. pot works well for families of 4-5. For a larger family a 6-7qt. works better.

Removable Liner: Most new models have this feature now.

Elements: Should be on the sides and not just the bottom

Shape: Ovals are better suited to the shape of roasts and whole chickens,

Features and Controls: Should have a least high and low. Some offer advanced pre-programmable features. An auto switch from high to low is very nice. Some have an auto shut-off as well.

Lid: Glass is nice, should seat well and the rim should not be difficult to clean

Handles: Need to be sturdy and stay cool so that you are able to lift and move the unit.
