Meat Grilling Hints:
Is it DONE? - - When you can keep your hand over a fire for three seconds, it means you have medium heat. At this temperature, most foods grill without burning on the outside. Professional chefs generally use touch to tell when the steak is done. Press down the center of the steak with your finger.
A rare steak will feel quite soft to the touch;
A medium-rare steak will have some resistance but yield to the touch
A medium steak starts to feel firm, but still have some give in the center
A well-done steak will feel very firm.
Fire it up: Prepare the fire a half hour or more before grilling. For quick lighting, use a chimney starter with crumpled newspaper in the bottom and briquettes or charcoal above. Or stack the charcoal in a pyramid shape and light with a liquid or electric starter. Charcoal is ready for cooking when it's 80% ashy grey in daylight, glowing red at night. This usually takes about 25 to 30 minutes.

My favorite mairnade tip is for teriyaki chicken. I bake it in the teriyaki sauce, then 5 minutes before it is done, I brush on some thicker, teriyaki glaze. (If you add the teriyaki glaze too early it disolves in the baking),

Using Italian dressing to marinate your meat is simple and inexpensive ... and it works for most types of meat.
My favorite marinade is Italian dressing...same one you use for salad, just put your meat or chicken in a ziploc with some dressing and by dinner it is super good.

My favorite marinade TIP is to seal the marinade in a bag with the meat with a vacuum food sealer. The marinade them penetrates the meat really well.

My favorite tip for marinades is use fresh herbs and seasonings. I grow basil, thyme and rosemary in my garden. I then rub them on the meat and pour just enough olive oil in the bag to cover it and refrigerate it overnight.

I like to marinate in resealable plastic bags (Ziploc, etc.) It's easy to distribute the marinade evenly, the bags can be turned periodically to cover all surfaces, and the bags can be tossed when you're done. Easy!

My marinating tip-Put the marinade in a ziploc bag. Put in the meat or whatever you're marinating and seal tight. This way, turning the bage you can manipulate the marinade, making sure that you turn it often and the meat gets well seasoned with the marinade.

my best tip about marinading is that even when the instructions or recipe say marinade for half an hour or two hours or however long, marinade overnight to really get the flavors in!
Favorite easy marinade: Use equal parts Italian salad dressing and Worcestershire sauce.
Favorite steak is a ribeye.
Use this marinade while bringing the ribeye to room temperature for just 30 minutes or so while you are getting the grill ready and you are good to go.
For less tender cuts of meat, marinate longer, part of the time while the meat is refrigerated. (you don't want it at room temp for too long!)

i like to use lawry's seasoning for pork chops. you can let them sit or (if you forget to marinade like i often do) you can put it on right before cooking. very good flavor!

Marinade Tip: while Acidic ingredients—fruit juice, wine, vinegar, yogurt or buttermilk—help tenderize the meat, retain the juices and add flavor. I use soy sauce for the Primary flavor...and no extra salt is needed!

I put the meat and the marinade in a Zip Lock bag. It's easy to turn and keep the meat covered in the marinade, and then you can just throw it away when you're done.

THE MOST important part of marinating is AFTER you've taken the meat off the grill, let it sit in the pan, with aluminum foil tented over it to keep it from getting cold, so that all the juices will remain IN the meat! Mmmmm...juicy...!

Absolute favorite marinade for chicken. Drizzle 4-5 breasts with canola or olive oil, add a packet of dry ranch powder, mix and marinate for at least 1-2 hours. It is best grilled but can also be broiled. SO GOOD!

My fave marinating tip is to almost always try to use citrus(lemons, oranges, limes, etc.) because it makes the meat SO flavorful..especially chicken!
