Pumpkin Cookies


My girlfriend and mom friend emailed me this yummy fall cookie recipe using Libby Pumpkin and I just knew you would want to know about it

Pumpkin Cookies

These are the perfect Fall cookie from one of our 24/7 MOMS.

1 15oz can Libby's 100% pure pumpkin
2 tsp baking soda
mix in large bowl, then add:

2 eggs
2 cups sugar
1 cup oleo, softened (we use Imperial)
when this is well blended add:

4 cups flour
2 tsp cinnamon
2 tsp nutmeg
1/4 tsp salt
Blend all well, then add:

12 oz chocolate chips, 2 cups raisins and (optional 2 cups pecans, chopped)

Place spoon sized batter on ungreased cookie sheet.

Bake at 375* for 10 minutes or until firm on top
don't overbake

Thanks for this easy recipe of yours. My kids can do this by their own and they will be much more enjoy if they add chocolate syrups on the tops of the cookies.

My kids don't like plain cookies. So they really used of putting some chocolate syrup or cream cheese frosting as toppings. I better try this one later on. Thanks a lot.
