Let's Make a Meal - Breakfast Buffet

The focus on our weekly Let's Make a Meal Mondays has been on sharing a weekly recipe or two that you, as a mom, can use to create a simple dinner meal.

This week I thought I would share breakfast recipes that create a simple brunch.

The first one I found in the August 2008 Taste of Home Simple and Delicious magazine.

It's a perfect egg dish for those camping adventures using your grill (gas or charcoal).



Simple Egg DishIngredients:

6 eggs
1/3 cup milk
1/8 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1/2 cup shredded cheddar cheese
1/4 cup chopped green pepper
4 brown-and-serve sausage links, chopped
4 bacon strips, cooked and crumbled
2 green onions, chopped

Directions:
Prepare grill for indirect medium heat.
In a small bowl, whisk the first five ingredients. Pour into three 4 disposable foil tart pans coated with cooking spray. Sprinkle with cheese, green pepper, sausage, bacon and onions.
Cover each pan with foil. Grill, covered, for 20-22 minutes or until eggs are completely set.

Yield: 3 servings


The second breakfast recipe I found was for a simple Coffee Cake using the good ole' box of Bisquick.

Bisquick Coffee Cake recipe
2 cups Bisquick
2 tablespoons granulated sugar
1 egg
2/3 cup water or milk


Mix all ingredients. Sprinkle Topping over the top. Bake in a greased 9-inch round pan at 400 degrees for 25 minutes.

Topping:
1/3 cup Bisquick
1/3 cup firmly packed brown sugar
1/2 teaspoon cinnamon
2 tablespoons butter, firm

Mix until crumbly.


Another yummy breakfast recipe was found at www.cooks.com.

Breakfast Fruit Salad

1 lb. can crushed pineapple with juice
1 (6-oz) can frozen orange juice, thawed
1 (6-oz) can frozen lemonade, thawed
1 (10-oz) pkg. frozen strawberries, thawed
2 bananas
1 (12-oz) bottle 7-Up

Mix together and freeze in a 9 square plastic pan with lid. Take out an hour or 2 before serving, so it will become a fruit slush. Serve in sherbet dishes. Can also serve with a small scoop of lemon or pineapple sherbet and top with a strawberry.

Frozen Breakfast Fruit Salad

2 (20-oz) cans crushed pineapple, undrained
2 (10-oz) packages frozen sweetened strawberries, thawed
1 (20-oz) can fruit cocktail, undrained
1 (12-oz) can frozen orange juice concentrate, thawed
1 (6-oz) can frozen lemonade concentrate, thawed
6 medium firm bananas, cubed
These are the base ingredients, now add whatever fruit you want.

In a large bowl, combine all ingredients. Pour into plastic wine glasses or foil muffin cups. Freeze until solid. When ready to serve, thaw for 30 to 45 minutes before serving.


To top off this brunch, you can make homemade Orange Julius beverages.

Orange Julius Recipe from www.cooks.com

Orange Julius
1/4 cup sugar
6 oz frozen orange juice concentrate
1 cup milk
1 cup water
1 teaspoon vanilla extract
10 ice cubes

In a blender, combine all ingredients; blend for one half minute or until ice cubes are crushed.

Servings: 4
