Egg-Cellent Easter Meals:
Do you have/serve Easter Dinner or Easter Brunch? In our home we have always celebrated Easter with a Big festive dinner including the traditional Ham, Green beans, Mashed potatoes, some sort of Jell-o, Butter flake rolls, Green salad and typically Strawberry shortcake for desert.
This year I'm looking for a few new recipes to give my Easter dinner a bit of a makeover. So, I've begun my recipe search.
First I asked our Facebook moms what YUMMY menus they have planned for the upcoming Easter day:

Ham with Pineapple, cheese hashbrown cassarole, jello salad, green beans, deviled eggs, rolls. Yum!
Baked ham, homemade potato filling, lettuce with hot bacon dressing, corn, green beans. Lemon bundt cake for dessert.

lamb, I grew up on lamb, and now my husband (who had never had it) favors having dinner with my side of the family. Usually the lamb is accompanied by roast new potatoes, asparagus and fresh baked bread.

We will have honey baked ham yum, dressing and gravy. Some form of potatos, green beans. And a dessert I have not decided on yet.

Baked ham, Strawberry pretzel jello salad, brussel sprouts (yum!) or green beans, green salad, some type of potatoes. Haven't decided what kind, yet, and still need to come up with a dessert. It's coming up too quickly!

Baked Asparagus with Parmesan Cheese
By: California Asparagus Commission
INGREDIENTS:
1 lb asparagus
1 Tbl olive oil
2 ½ Tbl grated parmesan cheese
1 ½ Tbl soft white bread crumbs
2 tsp margarine
Preheat oven to 450 degrees.
Toss asparagus spears in 1-2 tsp olive oil and arrange in baking pan .
Sprinkle with cheese and bread crumbs. Drizzle with remaining olive oil.
Bake uncovered until asparagus is just tender, about 15 minutes.
Serves 4
Next I wanted t a new Garlic Mashed potato recipes so I found one over at about.com
Mashed potatoes with garlic, butter, and Parmesan cheese, along with low fat milk and seasonings.The Parmesan cheese would be a new ingredient I have not tried in garlic mashed potatoes.

Then I wanted to find a new raspberry desert. I found this SIMPLE frozen one over at www.cooks.com.

Garlic Mashed Potatoes
Ingredients:
- 7 cups peeled and cubed baking potatoes
- 6 cloves garlic, peeled
- 1/2 cup low-fat milk
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Preparation:
Place potatoes and garlic in a saucepan. Cover with water; bring to a boil. Reduce heat. Simmer 20 minutes; drain. Place drained potatoes and garlic in a mixing bowl. Add remaining ingredients; beat with mixer until smooth. Serves 6 to 8.Then I wanted to find a new raspberry desert. I found this SIMPLE frozen one over at www.cooks.com.
FROZEN RASPBERRY DESSERT | |
1 c. flour
1/2 c. light brown sugar 1/2 c. chopped walnuts 1/2 c. butter 2 egg whites 1/2 c. sugar 10 oz. raspberries, thawed and drained 2 tsp. lemon juice 12 oz. Cool Whip, thawed
Combine 1st 4 ingredients. Mix well. Spread on cookie sheet 1/2 inch thick ungreased. Bake at 350 degrees for 20 minutes. Stir every 5 minutes to crumble. Let cool. Put 1/2 in 13x9x5 pan. Beat egg whites. Gradually add 1/2 cup sugar (1 tablespoon at a time), beating until stiff peaks form. Add raspberries and lemon juice. Fold in whipped cream topping. Spread evenly in pan. Sprinkle with reserved crumb mixture. Freeze until firm. Serves 15.
