Simple Left Over Ham Recipes

The big Easter celebration is over and I am now left with a pile of leftover Easter ham sitting in my refrigerator waiting to be created into new meals this week. In my search for a few new recipes I found these to share with you.

Ham Panini Sandwiches
By: Kraft Foods

Ingredients
2 slices multi-grain bread (1/2 inch thick)
1 Tbsp. MIRACLE WHIP Dressing
4 slices OSCAR MAYER Shaved Smoked or Brown Sugar Ham
2 thin slices tomato
1 KRAFT 2% Milk Singles
Directions
SPREAD
bread slices with dressing. Fill with remaining ingredients. COOK in heated grill pan or small skillet sprayed with cooking spray on medium heat 5 min. on each side or until golden brown on both sides.

Tips:

For added flavor, spread a little additional MIRACLE WHIP Dressing onto outside of sandwich before grilling. No need for cooking spray.

Ham Monte Cristo Sandwiches

  1. Sourdough Bread
  2. ham
  3. sharp cheddar
  4. a couple of eggs (depends on how many you are making)
  5. 1 dash of nutmeg
  6. 2 dashes of cinnamon
Take sourdough bread and place thin slices of leftover ham on one piece. Slice Cheddar then place on top of ham. Repeat. Place bread slice on top press down. Take a bowl and mix egg and spices, dip sandwich in egg mixture and cook on med high heat till melty, it should resemble crispy french toast.


Homemade Ham and Cheese Hot Pockets

Ingredients

egg wash

  • 1 egg, mixed with
  • water
  • Directions

  • Don't foget to allow time for the dough to thaw out!
  • Divide thawed dough into 12 pieces.
  • On floured surface, roll each piece into 5 or 6 inch circle.
  • Place 1/4 cup ham and one piece of cheese, chopped on each circle.
  • Fold dough over filling and seal edges.
  • Place on greased cookie sheet.
  • Bake at 350 degrees for 10-15 minutes. After 10 minutes, check pockets - remove when they begin to brown.
Tip: Add in Pizza sauce from a jar.

Ham and Potato Casserole By: mom-mom.com

This is a wonderful use for a cup of leftover ham and all the family members will love it.
1 cup sour cream
1 package dry onion soup mix
1 cup milk (any kind)
salt and pepper to taste
6 cold, cooked, potatoes, sliced thinly
3 hard boiled eggs, sliced thinly
1 cup cooked ham, diced
1 cup soft, buttered bread crumbs
Blend sour cream with onion soup mix and whip with a hand mixer until well incorporated. Stir
in milk, salt and pepper. In a greased 1 1/2 quart casserole, arrange in layers 1/3 of the potatoes,
one sliced egg, 1/3 of the sour cream mixture and ham. Repeat layers. Top with buttered crumbs.
Bake at 350 for half hour. Makes about 6 servings

Corckpot Ham and Lentil Stew By: Busy Cooks

This simple five ingredient stew recipe cooks all day in your crockpot.

Prep Time: 20minutes Cook Time: 8 hours,

Ingredients:

  • 3 cups chopped cooked ham
  • 3 cups chopped carrots
  • 2 cups dried lentils, sorted and rinsed
  • 2 onions, chopped
  • 2 (10 oz.) cans condensed chicken broth
  • 4 cups water

Preparation:

Combine all ingredients in 3-4 quart slow cooker and mix to combine. Cover crockpot and cook on low for 7-9 hours. 8 servings
