Dreamy MOTHERS DAY Brunch


On Mothers Day do you DREAM of waking up to the smell of bacon and eggs cooking along with the oh, so yummy smell of fresh cinnamon rolls?

I do. So , I thought I would share with you what My DREAMY Mothers Day brunch would include along with their recipes ( just in case Hubby is reading my blog):

* Simple Skillet Fried Potatoes
* Bacon and Cheese Quiche
* Nancy's YUMMY Cinnamon Rolls
* And I want HELL-O Cupcakes for Dessert.. YES, I am a cupcake addict so more than one please....

Well that is my DREAMY Mothers Day menu. However, I would be just as happy of a Mommy with a Quiznos Sandwich and eating on a picnic blanket with my Family.

Homemade Orange Julius

Ingredients

Directions

  1. Combine all ingredients, except ice cubes, in blender.
  2. -Blend 1-2 minutes , adding ice cubes one at a time, until smooth.


Simple Skillet Fried Potatoes.

Ingredients:

  • 4 cups potatoes, diced
  • 1 cup chopped green onions
  • 4 tablespoons butter
  • 1 garlic clove crushed
  • salt and pepper, to taste
Directions:
Cook diced potatoes in boiling water for about 4 minutes, ( you can microwave) until just a bit tender but not cooked. Drain potatoes and toss with green onions, garlic.

Heat butter medium heat in a heavy skillet; add potatoes and onions, garlic.

Fry, bringing potatoes up from bottom of pan with a spatula occasionally for even cooking and browning. Season to taste with salt and pepper.
Serves 4.


Bacon and Cheddar Quiche

This quiche could be served for brunch or lunch, along with mixed fresh fruit or a tossed salad. Use prepared pie pastry or a frozen thawed pie shell if you need to cut time.

INGREDIENTS:

  • 1 1/3 cups all-purpose flour
  • 1/8 teaspoon salt
  • 1/2 cup cold butter, cut in small pieces
  • 2 to 3 tablespoons ice-cold water

  • 8 strips lean bacon, cooked and crumbled
  • 4 large eggs
  • 1 1/2 cups half-and-half or whole milk
  • 1/4 teaspoon dried leaf thyme
  • 1/8 teaspoon pepper
  • 1 cup shredded sharp Cheddar cheese

PREPARATION:

Prepare crust for quiche. In a mixing bowl, mix together flour and salt. Cut in cold butter with a pastry blender until coarse crumbs form; add water, a little at a time, until dough holds together and forms a ball. Shape into a disk, wrap in plastic wrap, and refrigerate for about 30 minutes.

On a lightly floured surface with a floured rolling pin, roll out dough into a circle about 11 inches in diameter. Fit dough into a 9-inch pie plate or quiche pan. Trim edges, leaving a little overhang, about 1/4-inch all around the edge. Prick dough with a fork. Line with foil and fill with dried beans or pie weights. Bake quiche crust for 10 minutes at 375°.

In a small bowl, whisk together the eggs, milk, thyme, and pepper. Pour into the baked crust. Crumble bacon over the top with the shredded Cheddar cheese. Bake at 375° for about 30 minutes, or until quiche filling is set and top is lightly browned. Serve the quiche with fresh tomato wedges or a tossed salad.


Nancy's YUMMY Cinnamon Rolls


Ingredients
1 T. dry yeast
1 c. warm milk
1/3 c white sugar
½ c melted butter
1 tsp salt
2 eggs
4 c flour

Directions #1

Dissolve yeast in warm milk. Add the rest of the ingredients and mix well. Knead into a ball. Let rise until double in size. When ready, roll out to about ¼ inch thick. Spread with filing as described below.

FILLING
¼ c butter, softened
1c brown sugar
3 T. cinnamon

Spread butter on dough evenly. Sprinkle sugar and cinnamon over dough evenly. Roll dough up. Slice roll into 1 inch slices. Place on a greased pan. Let rise again until doubled. Bake 10 minutes at 400 degrees.

ICING
½ c butter, softened
1-1/2 c powdered sugar
1 oz cream cheese
2 T whipping cream
1 tsp vanilla
pinch of salt

Directions #2

Beat until fluffy. When rolls are hot, spread lots of icing on them.

TIP: Make these the night before needed. Skip the final rising step. Let rise overnight in the refrigerator. In the morning, bake.

Just like the famous ones in the malls.
