This week I have another FREEbie cookbook give-away - Jyl Steinback’s Countertop Magician. It contains more than 200 easy recipes using time saving kitchen appliances, like your blender, wok, toaster oven, electric skillet and microwave.

This week’s Let’s Make a Meal Mondays recipe comes from Countertop Magician, by Jyl Steinback.
One-Stop Chicken Meal
(serves 4 – original recipe served 2, so I doubled it in the recipe below)
Ingredients
12 oz boneless, skinless chicken breasts
3 tsp Mrs. Dash seasoning
2 medium potatoes, sliced
1 small onion, thinly sliced
2 cups baby carrots
½ cup non-fat chicken broth
½ tsp celery seeds
pepper to taste
Directions
Preheat toaster oven or conventional oven to 400°. Cut 4 pieces of heavy-duty foil into 8x10 inch rectangles; spray with cooking spray.
Place one chicken breast on each sheet and sprinkle with Mrs. Dash seasoning.
Divide potato, onion and baby carrots and arrange around the chicken breasts. Top each with 2 tablespoons chicken broth. Sprinkle with celery seeds and pepper.
Fold sides of foil around chicken and vegetables; fold over to seal
Bake 35 to 40 minutes, until chicken is cooked through and vegetables are tender.
